Fancy Prawn Cocktail

A family favourite and a Christmas Day tradition, this prawn cocktail was always served as a light, refreshing entrée between festive feasts. Nagyi and the whole family loved their prawns, especially when we added that little extra something special just for Christmas.

Prep Time: 15 minutes


Ingredients

For the cocktail:

  • 16 large king prawns, cooked, peeled, and deveined

  • 4 iceberg lettuce leaves, shredded

  • 2 radishes, finely sliced

  • Fresh chives, finely chopped

  • Fresh dill, roughly chopped

  • 4 lemon wedges

For the seafood sauce:

  • ½ cup whole egg mayonnaise

  • 2 tbsp tomato sauce (ketchup)

  • 1 tsp Worcestershire sauce

  • 1 tsp lemon juice

  • ½ tsp Tabasco sauce (optional)

  • Pinch of salt and pepper

Instructions

  1. Prepare the prawns: Peel and devein prawns, then pat dry with paper towel.

  2. Make the seafood sauce: In a small bowl, combine mayonnaise, tomato sauce, Worcestershire sauce, lemon juice, Tabasco, salt, and pepper. Stir until smooth and creamy.

  3. Assemble the cocktail:
    Place a layer of shredded lettuce in each glass bowl.
    Arrange 4 prawns over the lettuce.
    Spoon a generous amount of seafood sauce over the prawns.

  4. Garnish: Top with finely sliced radish, then sprinkle with chives and dill for colour and freshness.

To Serve

Serve chilled with a lemon wedge on the side. Perfect as a light entrée or between meals on Christmas Day.
